To sweeten the afternoon from her mini-kitchen, Paola has dabbled in making some tasty, yet light, ricotta biscuits that you can of course try when you come back to visit.
These biscuits are very simple and quick to make using ingredients we all have at home. Let's see them:
1 egg
200g ricotta cheese
230g of 00 flour
120g wholemeal brown sugar
8g baking powder
Moving on to the realisation...
First, pour the ricotta into a bowl. In another bowl, combine the sugar and egg, stirring this mixture with a spoon until creamy.
Next, add the ricotta cream, flour and baking powder to the mixture. Mix everything until the mixture is workable. With lightly floured hands, take small portions of the dough and round it to give it the classic biscuit shape we want. Prepare a baking tray with baking paper and place the dough shapes well apart. Bake in a preheated oven at 180° for about 15 minutes to obtain soft ricotta biscuits.
Variants and tips:
In the kitchen, you know, everyone can express themselves in complete freedom, satisfying everyone's tastes and needs. This recipe, for example, can also be made in a vegan version, replacing the classic ricotta with vegan ricotta or tofu. For those who are intolerant to gluten, it is also possible to replace the traditional yeast with natural yeast based on cream of tartar and corn starch, as well as 00 flour with rice flour. You can then add other ingredients according to your taste to make the biscuits more delicious, such as chocolate chips, orange or lemon flakes to give them a citrus flavour and many other ideas.
