PRAVAS BREAD: the recipe for homemade bread from your vegan hotel in Trentino

Today we offer you our Pravas bread recipe in a simplified version that you can easily recreate at home.



Ingredients for one loaf

500 g wheat semigrain flour

150 g refreshed sourdough

2 teaspoons salt

250 g water, not cold


First you need a sourdough that has already been refreshed, i.e. fed with water and flour and left to grow for 4-6 hours (depending on the temperature).

Put the sourdough in a bowl and add the water. Dissolve well.

In another larger bowl, weigh out the flour and then add the sourdough diluted with water.

Stir briefly with a spoon and then add the salt.

Finish mixing with the spoon and then continue working with your hands.

Turn out onto a floured baking board and start kneading.

Knead for 5-10 minutes until the dough is smooth and homogeneous.

Then grease a bowl and place the dough in it, covered with cling film.

Leave to rise at room temperature for at least 4-5 hours.

Then give it the desired shape and let it rest for another 30-45 minutes.

Cut in and bake in a preheated oven at 250 degrees for the first 10 minutes, then turn down to 200 degrees and bake for another 20-25 minutes.
