PLANT-BASED CHRISTMAS BISCUITS: EASY RECIPE FOR SPICED CHRISTMAS BISCUITS

Eco Park Hotel Azalea is the only eco-hotel with plant-based, vegetarian and vegan cuisine in Val di Fiemme (Trentino). Today we offer you a tasty recipe for simple Christmas biscuits that you can prepare with the whole family while you are waiting to go on ski holiday in Val di Fiemme!


The winter holidays are the best time to bake Christmas biscuits! This recipe for savoury Christmas biscuits is so delicious. We use the recipe for typical Christmas biscuits, which look like gingerbread biscuits but are a little different.


 

CHRISTMAS BISCUITS


INGRIDIENTS


250 g self-raising flour

or 250 g normal flour + half a sachet of baking powder


125 g dark brown sugar

4 tablespoons vegetable milk

160 g vegetable butter

2 tablespoons gingerbread spice

a pinch of salt



PROCEDURE


Put all the ingredients in a bowl.


Knead all the ingredients by hand or with a kneading machine. This is a rather dry dough, but you will find that the dough mixes better when kneaded. When you manage to form a ball, the dough is ready.


Wrap the dough in cling film and leave it to rest in the fridge for 30 minutes. You can also skip this step, but then the biscuits will be less crispy.


Preheat the oven to 170 °C.


Roll out the dough to about 0.5 cm thick and cut out biscuits.


Spread the shapes out on a baking tray lined with baking paper. Do not place them too close together, otherwise the biscuits will expand slightly.


Roll up the leftover dough and roll it out again so that you can cut out more shapes.


Bake the biscuits for 15-20 minutes. When they come out of the oven, they will still be a little soft, so let them cool and harden well first.
